Salad with beets and anthotiro cheese

This is a very easy beet salad. It is very tasty with boiled beets, even tastier with Fino vinegar!
INGREDIENTS
2-3 roasted beets, thinly sliced
1-2 tangerines or small oranges
3 1/3 oz greek cheese Anthotiro
2 Tbsps sunflower seeds
1/3 cup olive oil
2 Tbsps Fino white vinegar
1/4 cup tangerine or orange juice
salt and pepper, to taste
INSTRUCTIONS
In a bowl, whisk olive oil with vinegar, tangerine juice, salt and pepper. Drizzle the sliced beets with half the sauce and blend.
Prior to serving salad, drizzle the beets with remaining sauce and than add the cheese and the sunflower seeds.
